GENERAL DESCRIPTION OF WORK: Supervise, directs and instructs inmate food service workers in the preparation, serving, and storage of food commodities according to institutional menus and USDA food service standards.
ESSENTIAL FUNCTIONS: Supervises and instructs inmate workers in the use, cleaning and maintenance of food service equipment. Trains and orientates inmate workers in work unit policies, procedures and rules. Performs security checks on all food service areas, chemicals and utensils. May assist in the ordering, receiving and inventory of food service commodities, supplies and equipment.
KNOWLEDGE AND SKILLS: Knowledge of state and federal laws governing food preparation, proper sanitation, food handling and storage, nutrition and special diet preparation; knowledge of Wyoming health codes, knowledge of Inmate Rule Handbook, Penitentiary policy and procedures and security regulations; knowledge of report writing. Skill in oral and written communications; skill in mathematics, skill in mass food production, cost control and menu control; skill in equipment usage; skill in maintaining security and discipline.
MINIMUM QUALIFICATIONS: Any combination of training and experience equivalent to a high school diploma,PLUS five years of work experience in the planning, preparation and serving of food in a commercial, community service or institutional food service operation.
