GENERAL DESCRIPTION OF WORK: Prepares meals with the assistance of inmate personnel; provides training and supervision of inmate work crews in all phases of food service production, including special emphasis on training in nutrition, sanitation, proper food handling techniques (sorting, cleaning, cooking), food service equipment usage and safety; prepares special medical and religious diets; maintains accurate work records of inmate work crews, including weekly time sheets, training, discipline and work evaluations; maintains security and custody of assigned inmate personnel.
ESSENTIAL FUNCTIONS: Trains and supervises inmate employees in proper food preparation and sanitization, while preparing 3300 meals per day; establishes proper cleaning and preparation methods, ensuring compliance with Wyoming Department of Health codes at all times; provides nutritious, appetizing meals, utilizing cost effective methods, to a diverse population with specific meal needs (religious, medical), within a strict time frame; maintains security of hazardous knives and equipment, yeast and contraband during food preparation; provides hands-on instruction in use, maintenance, sanitation and upkeep of all food service equipment; ensures security of inmate work crews through coordination and communication with security staff.
KNOWLEDGE AND SKILLS: Knowledge of state and federal laws governing food preparation, proper sanitation, food handling and storage, nutrition and special diet preparation; knowledge of Wyoming Health Codes; knowledge of Inmate Rule Handbook, Penitentiary policy and procedures and security regulations; knowledge of report writing. Skill in oral and written communications; skill in mathematics; skill in mass food production; skill in cost and menu control; skill in equipment usage; skill in maintaining security and discipline. Applicant must have the physical ability to lift at least 50 lbs.
MINIMUM QUALIFICATIONS: Any combination of training and experience equivalent to a high school diploma, PLUS five years of work experience in the planning, preparation and serving of food in a commercial, community service or institutional food service operation.
Candidates will be required to submit to urinalysis testing to screen for illegal drug use and must successfully pass criminal history investigation and reference checks, prior to appointment
