GENERAL DESCRIPTION OF WORK: Supervises inmates working in the Food Service Dept., in food preparation, food handling, serving, and storage. Teaches inmates how to cook, food preparation techniques, basic sanitation and equipment use and maintenance. Assures inmate workers meet all safety and sanitation codes and follow department and institutional rules and regulations. Maintains high level of security and control of inmates. Assures inmate workers comply with personal health and hygiene requirements. Instructs inmate workers on proper use and maintenance of all food service equipment. Assists in: preparation of recipes and menu cycles; assures meals are nutritionally balanced; planning special diets.
ESSENTIAL FUNCTIONS: Directly manages and supervises inmate workers in food preparations, food serving, sanitation, safety, cleanliness, food handling and storage of food products. Teaches inmates how to cook, food preparation techniques and basic sanitation and equipment use and maintenance. Inspects work areas to monitor proper food handling, preparation and storage of food items. Inspects department to insure all areas meet health, sanitation and safety regulations. Performs Security checks on all food service areas, chemicals and utensils. Counts and records sharps and silverware after each meal. Enforces security measures in compliance with institution's correctional rules and regulations and tool control policy. Ensures safe use and maintenance of all equipment. Plans and provides training on all equipment for new employees. Assists in writing cycle menus. Plans standardized menu recipes. Document work evaluations for inmate workers and insert comments on Wyoming Correctional Information System. Attend Team Meetings for inmate performance assessment. Prepares and monitors meals to inmates in county jails and segregation areas.
KNOWLEDGE AND SKILLS: Ability to manage and supervise inmate employees; skills in communication verbal and written; skill in meal planning and preparation- also planning special occasion meals; knowledge in nutritional requirements, safety and sanitation, special diets, etc.; knowledge of mathematics to manage purchasing, inventory, stock, records to monitor and manage budget allotment; ability to work cooperatively with staff in inmates; ability to organize schedules, comply with State and Federal regulations; skill in training inmates in proper food handling and storage, hygiene and equipment usage; ability to work within budget allowance; skill in planning special diets and calculating nutritional needs.
MINIMUM QUALIFICATIONS: Any combination of training and experience equivalent to a high school diploma,PLUS five years of work experience in the planning, preparation and serving of food in a commercial, community service or institutional food service operation.
Candidates will be subject to background and reference investigation and shall be required to submit to urinalysis testing to screen for illegal drug use and physical exam prior to appointment.
